Masala

Masala is the Hindi word for mix and refers in Indian cooking to any kind of spice combination, from two ingredients to dozens. Each dish has its own Masala: Chana Masala for chickpeas, Sabzi Masala for vegetables, Chai Masala for tea and so on. Freshly ground Masalas have noticeably more aroma than pre-made blends, which is why many households in India mix their own.
