Idli

Steamed rice cake from South India

Idli is a steamed, slightly tangy cake made from fermented rice and Urad Dal batter. Fermented overnight, the batter is filled into special Idli molds and steamed. The result is a soft, sponge-like cake served for breakfast with Sambar and coconut chutney. Idli is easy to digest and protein-rich, making it popular as infant and convalescent food.
