Paneer
Indian fresh cheese without aging

Paneer is a fresh cheese made from cow or buffalo milk, produced by adding lemon juice or vinegar to heated milk. Unlike Western cheeses, Paneer does not age and does not melt when heated. This property makes it ideal for curries like Palak Paneer, Paneer Tikka or Matar Paneer, where it holds its cubic shape. Paneer is the most important protein source for vegetarian Indians.
